Chilli Chicken













Chilli Chicken 
Ingredients:
Chicken(boneless)                         500gms
Onion                                             2-3(med)
Capsicum                                       2-3(med)
Garlic                                             10-12 flakes
Green chilli                                     7-8
Eggs                                               1
Cornflour                                       
Soya sauce                                      3-4 tbsp
Tomato sauce                                 3-4 tbsp
Oil
Salt                                                 to taste

Procedure: 
1.     Marinate the chicken with salt, egg and cornflour. Deep fry the chicken and keep aside.
2.     In the remaining oil sauté garlic, the add chopped onion, capsicum and fry for sometime till they are done.
3.     Add soya sauce  and then the fried chicken.Mix them well with tomato sauce .
4.     Add water according to your required consistency. Make a mixture with 3 to 4 tbsp. cornflour and cold half a cup water in a cup.
5.     When the gravy starts boiling pour the mixture  and stir well.
6.     Remove from heat and garnish with slit green chilli.

Chinese Fried Rice













Chinese Fried Rice
Ingredients:
Basmati Rice                    500gms.
Prawns                             250gms.
Chickens                          250gms
Beans                               100gms.
Carrot                               100gms.
Eggs                                  5
Ginger                              1”
Soya sauce                        2-3 tbsp
Salt                                    to taste

Procedure

1.     Add soaked rice to boiling water. Add a pinch of salt according to taste. When the rice 3/4 cooked, drain the water and cool the rice by spreading it on a plate.
2.     Fry the prawns and boiled ,shredded chicken and keep aside.
3.     Scrambble eggs with a pinch of salt and keep aside.
4.     Heat oil in a pan / kadai. Add finely chopped ginger, then add chopped beans and carrot and fry for sometime.
5.     Now add the rice, mix well in oil. Add prawns, chicken and sprinkle soya sauce, salt and keep mixing.
6.     Remove from heat and spread it on a serving bowl and garnish it with scrambled eggs.

Tip : When frying rice in a pan, the rice tends to stick to the pan. To avoid this make sure the oil in the pan is very hot and the rice very cold. This way the rice will never stick to the pan.

FISH CURRY

FISH CURRY ( MACHER KALIA)




Ingredients:
Rohu fish                               4-5 pcs 
Onion                                    2 med. size
Ginger                                   1tsp(paste)
Garlic                                    1tsp(paste)
Turmeric pd                           1tsp.
Kashmiri Lal mirch                 1tsp
Cumin pd.                              1tsp
Everest chicken masala           3tsp
Curd                                      Half cup 
Sugar                                     1tsp 
Oil                                         7-8 tbsp
Salt                                        To taste


Procedure:
1.. Make a paste with Onion, ginger & garlic.
2. Fry the fish in oil. Remove the fish. In the remaining oil add cardamom,clove,bay leaf & cumin seeds.
3. Saute & add the paste.Fry for 1to 2 mins.
4. Now add all the powder mixtures.Fry on low heat.
5. Add curd, salt & sugar to taste.
6. Add water & make a gravy.
7. Add the fish & let it simmer for sometime.
8. Remove from heat & garnish with coriander leaf & serve hot with rice or chapati.

PANEER KORMA

 PANEER KORMA


Ingredients
1.Fresh Paneer-----------200 gm
2.Onion----------------------2
3.Garlic--------------3-4 pcs
4.Poppy seeds(paste)-2tsp
5.Mustard seed(paste)------2 tsp
6.Red chilli powder-------1 tsp
7.Turmeric------------------1 tsp
8.Oil-------------------------3-4 tsp
9.Salt-------------------- to taste
10.Sugar----------------to taste


Procedure
1. Boil the onion and then make a paste with garlic
2.Heat the oil and fry the paneer and leave aside.
3.Saute(light fry) whole garam masala and bay leaf(tej patta) in the oil.Add boiled onion and saute for sometime.
4.Add poppy paste, mustard paste and saute,then add turmeric, red chilli powder,salt and sugar and pour water.
5.Add paneer and serve hot with paratha or roti


**Replace paneer  with fried chicken or fried fish and have a new item on your dining table!!!
